Easy Potato and Cucumber Fry-up (Serves 2)

2 large potatoes
1 whole cucumber
2 garlic cloves or garlic seasoning
splash of soy sauce
1/2 tin of tomatoes
pinch of paprika
pinch of mixed herbs
vegetable or olive oil


1. Cut the potatoes into chunks and boil until tender in a saucepan
2. Cut the cucumber into slices
3. Roughly chop the garlic (if using)
4. Heat a small amount of the oil in a large frying pan
5. Add the ingredients to the frying pan

Cook and stir-fry on a high heat for about 4 minutes

Season with salt and pepper

Serve with fresh bread or rice.
